3 cups confectioner's sugar
1 pkg (8 oz) cream cheese, softened
1 1/2 teaspoons vanilla extract
1 teaspoon mint extract
4 drops green food coloring (optional)
In a large bowl, with mixer at low speed, beat confectioner's sugar, cream cheese, food coloring, vanilla extract, and mint extract just until blended.
Increase speed to medium. Beat for 1 minute or until smooth and fluffy, frequently scraping the bowl.

Mint Chocolate Chip Cupcakes
This cupcake was actually one that was requested of me from a girl that I work with. I paired it with a mint cream cheese frosting. I also added a few drops of green food coloring to give it a minty look.
Ingredients
-1 1/2 sticks unsalted butter, room temperature, softened
-1 cup sugar
-3 large eggs
-1 teaspoon vanilla extract
-1 teaspoon peppermint extract
-3/4 cup all purpose flour
-3/4 cup unsweetened cocoa powder
-1/2 teaspoon baking soda
-1/4 teaspoon salt
-1/2 cup milk
-1/4 cup chocolate chips
Cream the butter and sugar together until it's light and fluffy. Add the eggs one at a time while continuing to mix. Add vanilla and peppermint extracts.
In a separate medium bowl, whisk together the flour, cocoa powder, baking soda and salt.
Add the flour mixture to the liquid mixture a little at a time, alternating with the milk. Then stir in the chocolate chips.
Pour the batter into your cupcake pan fitted with papers. Fill them a little more than 3/4 full. Bake at 350 degrees for 18-20 minutes
